With a pan that size I would just do one at a time, *maybe* two if you’re rushed. Start with the patties much wider than you think they need to be. And a hotter pan, the longer they’re in there the more they’ll shrink.

Little melted butter, liquid smoke, worcestershire sauce. Get the pan hot until you see a little white smoke, not a lot. Drop the ball of meat on the pan and use smaller pan to smash thin, flip after ~1-2 min. Wait another 2 min. Bam, smash burgers

Onions need to be minced. When you make your patties, put an indent in the center, making them concave. It will prevent the center from puffing up higher than the edges while cooking. Also be sure the circumference of the patty is slightly wider than your buns and it will shrink to the right size.
